  • 1 can 380g Chickpeas in water, drained and rinsed
  • 1/2-1 Red bell pepper finely chopped
  • 100 g Red onion thinly sliced
  • 2 tbsp Freshly grated ginger
  • 1 clove Garlic minced
  • 2 Long red chilies medium heat, finely chopped
  • A generous handful of Fresh coriander/cilantro including the stems

For the Sauce:

  • 2 tbsp Mirin sweet rice wine
  • 2 tbsp Soy sauce
  • 1 tbsp White rice vinegar
  • Juice of 1 lime
  • 2 tsp Agave syrup or honey for a touch of sweetness
  • 1-2 tsp Roasted sesame oil adds a deep, nutty flavor
