This version has just the right balance. It’s spicy, slightly sweet, and sharp enough to wake up your taste buds, but not so acidic that it overpowers everything else on the plate. Creating a Hot Sauce That Works with Every Meal

You can customize your hot sauce by using different chili varieties. This sauce is made with fresh chilies, garlic, red onion, vinegar, brown sugar, and a touch of water, blended into a smooth, vibrant condiment.

Because I use just enough vinegar (instead of going overboard), the sauce is well-balanced and versatile. That makes it perfect not only as a table sauce but also for marinades, glazes, or mixing into pasta and rice dishes.

Homemade Hot Sauce (Easy & Customizable Recipe)

This homemade hot sauce is bold, vibrant, and completely adjustable to your taste. Made with fresh chilies, vinegar, garlic, and a touch of sweetness, it’s a perfectly balanced condiment that can be mild or fiery depending on your chosen chili variety. It's quick to make, easy to blend into a smooth consistency, and ideal for spicing up everything from grilled meats and tacos to noodles. Best of all, it’s not overly vinegary, just full of pure chili flavor.

Ingredients
  

  • 250 g fresh chilies choose your preferred variety
  • 4 tbsp spirit vinegar or white wine vinegar
  • ½-1 tbsp salt adjust to taste
  • 1 tbsp brown sugar
  • 1 small red onion chopped
  • 1 large garlic clove sliced
  • ½ optionally, red or green bell pepper match to your chili color
  • 100-150 ml water adjust based on desired consistency

Instructions
 

Prep the ingredients:

  • Wash the chilies and remove the stems. Cut into chunks. Peel and finely dice the red onion. Slice the garlic clove. Dice the bell pepper if using.

Cook the sauce base:

  • Add the chilies, red onion, garlic, and the optional bell pepper to a saucepan. Pour in the water, vinegar, brown sugar, and salt. Bring to a simmer over medium heat and cook for about 15 minutes, or until the chilies and onions are completely soft.

Blend:

  • Remove from heat and let the mixture cool for 10–15 minutes. Then, blend until smooth.
  • If you prefer a silky texture, strain the sauce through a fine mesh sieve.

Store:

  • Pour into a clean bottle or jar. Store in the refrigerator. The sauce keeps for a few days as-is, or up to a week if you stir in extra vinegar after blending.

Note: This hot sauce is intentionally low in vinegar for a fresher, more chili-forward flavor. If you prefer a tangier sauce or longer shelf life, simply increase the vinegar.

    • The heat level will depend on the chili variety you choose. Feel free to mix mild and hot chilies for a balanced flavor.
    • For a smoother texture, strain the sauce after blending it using a fine-mesh sieve.
    • Keeps well in the fridge for a few days. For a slightly longer shelf life, increase the amount of vinegar slightly after blending.
