Ingredients
Chicken
- 4 chicken breast fillets
Chili Garlic Oil (Marinade & Sauce)
- 1 onion finely chopped
- 3 garlic cloves thinly sliced
- 8 tbsp canola oil
- 1 – 2 tbsp sesame oil
- 1 chili flakes or to taste
- ½ – 1 tbsp salt
- ½ tsp black pepper
- 1 tbsp maple syrup
For Garnish
- Parsley or Cilantro chopped
Instructions
Roast the Onion and Garlic
- Preheat the oven to 120°C (250°F).
- Spread the chopped onion and sliced garlic on a baking tray lined with parchment paper.
- Roast for 30–40 minutes, stirring occasionally, until dry and lightly golden.
- Let cool, then lightly crush the mixture using a mortar and pestle or the back of a knife.
Prepare the Chili Garlic Oil
- Heat the canola oil in a small saucepan until warm.
- Add the chili flakes, salt, and black pepper.
- Stir in the roasted onion and garlic mixture.
- Remove from the heat and add the sesame oil and the maple syrup.
- Let the oil cool completely.
Marinate the Chicken
- Place the chicken fillets in a bowl or dish. Pour about a third of the chili garlic oil over the chicken and coat well. Cover and marinate in the fridge for 1–2 hours.
- Reserve the remaining oil for serving.
Grill the Chicken
- Preheat the grill to medium-high heat.
- Grill the chicken for 5–7 minutes per side, or until fully cooked.
Serve
- Transfer the grilled chicken to a serving plate. Spoon the reserved chili garlic oil over the chicken just before serving. Garnish with chopped parsley or cilantro.
