Rustic No-Knead Bread Rolls
Ingredients
🥖 Ingredients (Makes 12–14 Rustic Rolls)
- 5 dl / 500 ml lukewarm water
- 1 dl / 100 ml milk
- 25 g fresh yeast ½ packet
- 2 tsp salt
- 1 tbsp honey
- 12 ½ dl wheat flour
- or 10 dl wheat flour + 2½ dl spelt flour for a nuttier flavor
- Extra flour for dusting and shaping

- Make the Dough
- Pour lukewarm water and milk into a bowl. In a separate large bowl, crumble in the yeast and add the salt and honey. Stir with a wooden spoon while adding a small amount of the liquid to dissolve the yeast, then gradually mix in the rest. Slowly stir in the flour until you get a sticky, slightly loose dough.
Rise the dough
- Sprinkle about 2 tbsp of flour over the surface. Cover with a kitchen towel and let rise for 1 to 1½ hours in a warm, draft-free place—until doubled in size.
Preheat & Prep Trays and Rolls
- Preheat your oven to 240–250°C (465–480°F). Line two baking trays with parchment paper.
- Turn the dough gently onto a floured surface—do not knead. Sprinkle flour on top and lightly pat it down. Cut into 6–7 strips, then divide each into 2–3 rustic-looking pieces. Transfer to the trays.
Bake One Tray at a Time
- Bake one tray at a time for about 20 minutes or until golden brown and crisp. The first batch may need a minute or two longer.
Cool & Enjoy
- Let cool uncovered to keep the crust crispy. Serve warm or at room temperature.
Notes
For a crunchier crust: Add steam by placing a small ovenproof dish of hot water in the oven while baking. These rustic no-knead bread rolls are light, airy, and irresistibly crisp. Ideal for everyday meals or special moments, they’re sure to become a household favorite.
