Pea Purée

This easy pea purée is made with frozen peas, onion, vegetable stock, and cream. It has a fresh, slightly sweet flavor and a creamy texture with just a little bite. Serve it with grilled salmon, pan-fried fish, roasted chicken, or lamb. It's also delicious alongside Finnish new potatoes.

Ingredients
  

  • 3 dl about 2 cups / 300 g frozen peas
  • 1 medium onion finely chopped
  • 2 tbsp butter
  • 1 dl (⅓ cup + 1 tbsp) vegetable stock
  • 1 dl (⅓ cup + 1 tbsp) heavy cream
  • Salt to taste
  • Freshly ground black pepper to taste
  • Pinch of sugar
  • A few drops of fresh lemon juice

Instructions
 

  • Melt the butter in a saucepan over medium heat. Add the chopped onion and cook for 5–7 minutes, stirring occasionally, until softened. Do not let it brown.
  • Stir in the frozen peas, vegetable stock, and heavy cream.
  • Season with salt, black pepper, and a pinch of sugar.
  • Bring to a gentle boil, then reduce the heat and simmer for 3–5 minutes, until the peas are tender.
  • Remove the saucepan from the heat and blend with an immersion blender until mostly smooth. Leave a little texture if you like.
  • Stir in a few drops of fresh lemon juice. Taste and adjust the seasoning before serving.

Notes

Frozen peas work perfectly for this recipe and give the purée its bright green color.
If the purée is thicker than you like, stir in a splash of warm vegetable stock or cream.
Serve with grilled salmon, pan-fried white fish, roasted chicken, lamb, pasta, or grilled vegetables.
