Enjoy tender, flavorful pork souvlaki marinated in a blend of lemon, garlic, and fresh herbs, then grilled to perfection. Served with a refreshing homemade tzatziki sauce made from creamy Greek yogurt, cucumber, and garlic, this classic Greek dish is perfect for summer grilling and casual gatherings. Quick to prepare and full of vibrant flavors, it’s a crowd-pleaser that brings the taste of the Mediterranean to your table.
Trim the pork tenderloin of silver skin and slice it into even-sized cubes (about 2.5–3 cm). Try to keep the pieces uniform for even cooking.
In a bowl or resealable bag, combine olive oil, wine, garlic, lemon juice, lemon zest, oregano, rosemary, bay leaves, honey, salt, and pepper.
Add the pork cubes and toss to coat evenly. Cover and marinate in the refrigerator for at least 2 hours or preferably overnight.
If using wooden skewers, soak them in water for 30 minutes before grilling.
Thread the marinated pork pieces onto skewers.
Grill over medium-high heat for about 10–12 minutes, turning occasionally, until the pork is cooked through and nicely browned.
Make the Tzatziki:
In a bowl, mix Greek yogurt with grated and squeezed cucumber.
Add garlic, olive oil, lemon juice (or vinegar), and salt. Stir to combine.
Add chopped dill or mint if desired. Chill before serving.
