Tomato Bruschetta with Basil and Garlic

This tomato bruschetta with basil and garlic is a timeless Italian-inspired appetizer that captures the essence of summer. Grilled rustic bread is rubbed with garlic, topped with juicy cherry tomatoes, fresh basil, and a generous drizzle of olive oil. Simple, fragrant, and utterly delicious – perfect for serving as a starter or light snack.

Ingredients
  

  • 1 rustic baguette or ciabatta
  • 11 tbsp extra virgin olive oil
  • 500 g cherry tomatoes or other small tomatoes
  • 1 dl fresh basil finely chopped
  • 2 garlic cloves
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions
 

Prep the bread:

  • Slice the baguette or ciabatta into approximately 1.5 cm thick slices. Brush each slice using 6 tablespoons of olive oil.

Toast the bread:

  • Grill or toast the slices on a hot grill or grill pan until golden brown and nicely charred. Let cool slightly.

Prepare the tomato topping:

  • Quarter the tomatoes and place them in a mixing bowl. Add chopped basil, 5 tablespoons of olive oil, a generous pinch of salt, and freshly ground black pepper. Mix well and let sit for 5–10 minutes for the flavors to blend.

Add garlic flavor:

  • Lightly crush the garlic cloves with the side of a knife. Rub the toasted bread slices with the cut side of the garlic while they’re still warm.

Assemble the bruschetta:

  • Spoon the tomato mixture evenly over the toasted bread. Optionally, grate some Parmesan on top for an extra layer of flavor.

Serve immediately:

  • Arrange on a platter and serve right away for the best texture and freshness.

Notes

Tips:
Use ripe, sweet tomatoes for the best flavor. Cherry or heirloom varieties work beautifully.
Let the tomato mixture marinate for a few minutes to deepen the flavor.
Try adding a splash of balsamic vinegar or a few chili flakes for variation.
This is best served immediately to keep the bread crisp.
Perfect with a chilled glass of white wine or rosé.
