Cuisine Italian
- 1 rustic baguette or ciabatta
- 11 tbsp extra virgin olive oil
- 500 g cherry tomatoes or other small tomatoes
- 1 dl fresh basil finely chopped
- 2 garlic cloves
- Salt to taste
- Freshly ground black pepper to taste
Prepare the tomato topping:
Quarter the tomatoes and place them in a mixing bowl. Add chopped basil, 5 tablespoons of olive oil, a generous pinch of salt, and freshly ground black pepper. Mix well and let sit for 5–10 minutes for the flavors to blend.
Tips:
Use ripe, sweet tomatoes for the best flavor. Cherry or heirloom varieties work beautifully.
Let the tomato mixture marinate for a few minutes to deepen the flavor.
Try adding a splash of balsamic vinegar or a few chili flakes for variation.
This is best served immediately to keep the bread crisp.
Perfect with a chilled glass of white wine or rosé.
