Ingredients
  

For the pork marinade

  • 600-700 g pork tenderloin (1.3–1.5 lb)
  • 3 tbsp soy sauce
  • 2 tbsp honey
  • 3 garlic cloves finely chopped
  • ½ tsp black pepper

For the grilled vegetables

  • ½ small cabbage cut into wedges
  • 3 medium carrots cut lengthwise
  • 2 tbsp olive oil
  • 1 tbsp honey
  • Salt and black pepper to taste

For the onion sauce

  • 1 tbsp butter or olive oil
  • 1 medium onion finely chopped
  • 4 garlic cloves finely chopped
  • 1-2 tbsp honey
  • 120 ml chicken stock (½ cup)
  • Salt and black pepper to taste

For Serving

  • Flat leaf parsley for garnish roughly chopped

Instructions
 

Marinate the pork:

  • In a bowl, mix soy sauce, honey, chopped garlic, and black pepper. Coat the pork tenderloin with the marinade and refrigerate for about 2 hours.

Prepare the vegetables:

  • In a bowl, toss the cabbage wedges and carrots with olive oil, honey, salt, and black pepper until evenly coated.

Grill the pork:

  • Preheat a grill or grill pan to medium-high heat. Grill the pork tenderloin for about 15–18 minutes, turning occasionally, until cooked through, and the internal temperature reaches 65 °C (149 °F). Let the meat rest covered with foil for about 10 minutes before slicing.

Grill the vegetables:

  • Place the cabbage and carrots on the grill and cook until lightly charred and tender, about 10–15 minutes depending on size.

Make the onion sauce:

  • Heat butter or oil in a small pan over medium heat. Add the chopped onion and cook slowly for about 8–10 minutes until caramelized.
  • Add the garlic and cook for another minute. Stir in the honey and chicken stock, then simmer for a few minutes until slightly reduced. Season with salt and black pepper.

Serve:

  • Slice the pork tenderloin and serve with the grilled cabbage and carrots. Spoon the onion sauce over the pork.
  • Add chopped parsley on top.

Notes

The pork can also be cooked in a grill pan or skillet if an outdoor grill is not available.
Rest the pork after grilling for 10 minutes in foil.
