Tomato basil bruschetta with Parmesan is a timeless Italian appetizer, perfect for summer gatherings. It’s one of those dishes that lets ripe tomatoes shine, with just a few high-quality ingredients bringing out their very best.

Last weekend, we had a small family celebration. As the table came together, we started the evening with these tomato basil bruschettas, served alongside chilled sparkling rosé prosecco. The bruschetta was a hit, the juicy tomatoes, fresh basil, a drizzle of great olive oil, and a final shower of Parmesan Reggiano over toasted bread set a perfect tone for the evening.

Why I Love This Tomato Basil Bruschetta Recipe

Every summer, I make this tomato basil bruschetta recipe again and again. It’s one of the easiest ways to celebrate seasonal tomatoes, which I honestly eat every day during the summer months. The key is using very ripe cherry tomatoes, fragrant basil (fresh from the garden, if possible), and good-quality extra virgin olive oil. A sprinkle of flaky sea salt brings the flavors alive.

For bread, I like to use either ciabatta or a rustic country-style loaf. A day old is perfect, since it holds up well when toasted. This time, I rubbed the grilled ciabatta bread slices with raw garlic before piling on the tomato topping, then finished them with finely grated Parmesan. The result? Crunchy, juicy, and full of flavor.

Make the Most of Summer Ingredients

In my garden, tomatoes are still green. We’ve had a fairly cool summer in Helsinki, but luckily the local markets have plenty of flavorful ones available. In this recipe, the basil was the only ingredient straight from the garden. Still, it’s a wonderful way to use what’s fresh and local.

This fresh and flavorful bruschetta is the perfect way to celebrate summer’s bounty and bring a taste of Italy to your table. It makes a perfect first course for a summer Italian dinner. Serve it before my Prosciutto and Melon Salad and Grilled Beef Sirloin for a truly memorable meal.

Ingredients

  • 1 rustic baguette or ciabatta
  • 11 tbsp extra virgin olive oil
  • 500 g cherry tomatoes or other small tomatoes
  • 1 dl fresh basil finely chopped
  • 2 garlic cloves
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions

Prep the bread:

  • Slice the baguette or ciabatta into approximately 1.5 cm thick slices. Brush each slice using 6 tablespoons of olive oil.

Toast the bread:

  • Grill or toast the slices on a hot grill or grill pan until golden brown and nicely charred. Let cool slightly.

Prepare the tomato topping:

  • Quarter the tomatoes and place them in a mixing bowl. Add chopped basil, 5 tablespoons of olive oil, a generous pinch of salt, and freshly ground black pepper. Mix well and let sit for 5–10 minutes for the flavors to blend.

Add garlic flavor:

  • Lightly crush the garlic cloves with the side of a knife. Rub the toasted bread slices with the cut side of the garlic while they’re still warm.

Assemble the bruschetta:

  • Spoon the tomato mixture evenly over the toasted bread. Optionally, grate some Parmesan on top for an extra layer of flavor.

Serve immediately:

  • Arrange on a platter and serve right away for the best texture and freshness.

Notes

Tips:
Use ripe, sweet tomatoes for the best flavor. Cherry or heirloom varieties work beautifully.
Let the tomato mixture marinate for a few minutes to deepen the flavor.
Try adding a splash of balsamic vinegar or a few chili flakes for variation.
This is best served immediately to keep the bread crisp.
Perfect with a chilled glass of white wine or rosé.
